Apple butter isn't butter. It's apple paste, reduced to dark brown. Sweet, spiced, spreadable.
Ingredients
5 kg apples (any, tart preferred). 2 cups sugar. 2 cups apple cider. 2 tsp cinnamon. 0.5 tsp cloves. 0.5 tsp nutmeg.
Directions
1. Peel, chop apples. Add cider. Cook 1 hour until soft. 2. Mash (with masher — Amish have no blender). 3. Add sugar and spices. 4. Cook on LOW heat 8-12 hours, stirring every 30 minutes. 5. Done when spoon stands vertically and doesn't fall. 6. Pour into jars hot. Seal.
Storage
In cellar — one year. In fridge — 3 months opened. On bread, pancakes, ice cream (if Amish had ice cream... well, sometimes they do).
