Shoofly pie is the signature Amish dessert. Named because flies love the molasses and need shooing away.

Ingredients

Crust: 1.5 cups flour, 0.5 cup cold butter, pinch of salt, 3-4 tbsp ice water.

Filling: 1 cup molasses, 0.75 cup boiling water, 1 tsp baking soda.

Crumb: 1.5 cups flour, 0.5 cup brown sugar, 0.33 cup butter.

Directions

1. Crust: mix flour+salt, cut in butter, add water. Roll out, line 9" pan.

2. Filling: mix molasses + boiling water + soda. Pour into crust.

3. Crumb: mix flour + sugar + butter by hand. Sprinkle on top.

4. 375°F (190°C), 35-40 minutes. Center slightly jiggly — done.

Two Styles

Wet bottom: more molasses, less crumb. Sticky, gooey.

Dry bottom: more crumb, less molasses. Crumbly, cake-like.
