A root cellar is the Amish refrigerator. At 2–3 meters deep, ground temperature stays stable: 2–4°C in winter, 10–12°C in summer.
Site Selection
A north-facing hillside is ideal. Soil is cooler, water drains away. Never build in a low spot. At least 15 meters from septic or compost.
Construction
Dig a 3×4 meter pit, 2.5–3 meters deep. Walls — stone or brick, not concrete blocks (they pass moisture). Floor — packed earth or gravel — maintains 90–95% humidity.
Ventilation
Two pipes: intake near the floor, exhaust near the ceiling. Air enters at the bottom, warms, exits at top. Without ventilation, ethylene from apples accelerates spoilage.
What to Store
Potatoes — 4–6 months. Carrots in sand — 5 months. Beets — 3–4 months. Apples — separate from vegetables. Cabbage — 3 months. Onions and garlic — dry corner.
Amish rule: never store apples next to potatoes. Apples release gas that makes potatoes sprout.
