Root beer is a traditional Amish drink. Made from bark and roots, carbonated with yeast.
Recipe
2 tbsp sassafras extract (or root beer extract). 1 cup sugar. 1/4 tsp dry yeast. 4 liters warm water. Dissolve sugar, add extract and yeast. Bottle in plastic (not glass — may explode). Room temp 24-48 hours.
Doneness
Squeeze bottle — if firm, carbonation is enough. Refrigerate to stop fermentation. Drink cold.
Safety
Plastic bottles only for fermenting. Glass can explode from pressure. Don't over-ferment — check every 12 hours.
Taste
Like store root beer but fresher and less sweet. Light tingle from natural carbonation. Contains minimal alcohol (0.5-1%) — Amish don't consider it alcoholic.
