Black elderberry (Sambucus nigra) grows along fences and roads. The Amish brew syrup from it every fall.
Syrup Recipe
200g dried elderberries + 700ml water. Simmer 45 minutes until liquid reduces by half. Strain, cool to 40°C. Add 200g honey. Stir. Refrigerate up to 3 months.
Usage
Adults: 1 tablespoon daily for prevention. During a cold: 3–4 times daily. Children over 2: 1 teaspoon. Can add to tea, water, or pancakes.
What Science Says
Studies show elderberry extract may shorten cold duration by 2–4 days. Berries contain anthocyanins and vitamin C. Not a doctor replacement, but as immune support — it works.
Caution
Raw berries and leaves are toxic — contain cyanogenic glycosides. Cooking destroys the toxin. Don't eat raw. Don't confuse with red elderberry (Sambucus racemosa) — it's more toxic.
