A box of damp sand. Simple method, works 6–8 months.
Technique
5 cm sand layer. Vegetable layer (not touching). Sand layer. Repeat. Top with 5 cm sand.
Important
Don’t wash — just shake off dirt. Trim tops to 1–2 cm. Remove rotten ones.
Conditions
0–4°C, 90–95% humidity. Root cellar ideal.
Duration
Carrots 6 months. Beets 4–5. Parsnips 4.
