Preparation
Lean meat, no fat. Slice 3β5 mm. With grain β tougher, stores longer. Against β softer.
Marinade
Salt, pepper, garlic. Optional: soy sauce, brown sugar, paprika. Soak 12β24 hours.
Drying
Sun: 2β3 days. Oven: 60β70Β°C, 4β8 hours. Smokehouse: smoke + dry.
Doneness
Flexes and cracks but doesnβt snap. Snapping = overdried.
Storage
Paper bag 1β2 months. Jar 3β6. Cellar up to a year.
