Drying is the simplest preservation method. No jars, no sugar, no cold. Remove water — bacteria can't live.

Apples

Slice into 5mm rings. Sprinkle with lemon juice (prevents browning). String on thread or lay on mesh. Sun-dry 2–3 days or oven at 60°C for 6–8 hours. Done when flexible but not snapping.

Tomatoes

Halve, salt, place cut-side up. Sun: 4–7 days (cover with cheesecloth against flies). Oven: 60°C, 8–12 hours. Store in oil or dry jars.

Herbs

Tie in bundles, hang upside down in a dark dry place. 1–2 weeks. Light destroys essential oils — dry in shade. Store in glass jars. Shelf life: 1–2 years.

General Rules

Thinner slices = faster drying. Lower humidity = better results. Store in airtight containers in dark place. Condensation inside jar = not dry enough, will mold.
